Description

A moist, sweet loaf combining ripe bananas and fresh strawberries for a burst of fruit flavor in every slice.


Ingredients

  • 1 cup butter or margarine, room temperature
  • 2 cups granulated sugar
  • 4 eggs
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 6 very ripe bananas, mashed (preferably overripe)*
  • 2 cups fresh strawberries, sliced into quarters and tossed in 2 tablespoons flour
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Cream butter and sugar together until light and fluffy.
  3. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  4. In a separate bowl whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the butter mixture alternately with milk, beginning and ending with the flour mixture, mixing just until combined.
  6. Fold in the mashed bananas and sliced strawberries gently.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55‑60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For extra moistness, use bananas that are very overripe; you can also add a sprinkle of cinnamon for warmth.
