Description
A moist, sweet loaf combining ripe bananas and fresh strawberries for a burst of fruit flavor in every slice.

- 1 cup butter or margarine, room temperature
- 2 cups granulated sugar
- 4 eggs
- 4 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1/4 teaspoon salt
- 6 very ripe bananas, mashed (preferably overripe)*
- 2 cups fresh strawberries, sliced into quarters and tossed in 2 tablespoons flour
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- Cream butter and sugar together until light and fluffy.
- Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
- In a separate bowl whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture alternately with milk, beginning and ending with the flour mixture, mixing just until combined.
- Fold in the mashed bananas and sliced strawberries gently.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55‑60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For extra moistness, use bananas that are very overripe; you can also add a sprinkle of cinnamon for warmth.
