Description

Fluffy pancakes loaded with sweet strawberries for a delightful breakfast treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup strawberries, diced
  • 1 large egg
  • 1 1/4 cups milk
  • 2 tsp baking powder
  • 2 tbsp granulated sugar
  • 1 tbsp vegetable oil
  • 1/2 tsp vanilla extract
  • 1 pinch salt
  • Butter for cooking

Instructions

  1. In a large bowl whisk together flour, baking powder, sugar, and salt.
  2. In a separate bowl beat the egg, then add milk, melted butter, vanilla, and stir.
  3. Combine wet ingredients with dry ingredients and mix until just blended.
  4. Gently fold diced strawberries into the batter.
  5. Heat a non-stick skillet over medium heat and lightly coat with butter.
  6. Pour 1/4 cup of batter per pancake onto the skillet.
  7. Cook until bubbles form on the surface, about 2 minutes, then flip and cook until golden.
  8. Serve the pancakes warm with extra strawberries and maple syrup if desired.

Let the batter rest for 5 minutes for extra fluffiness.
