Description

A bright, refreshing salsa featuring sweet corn, tomatoes, and lime, perfect for summer gatherings.


Ingredients

  • 4 ears of sweet corn (or 4 cups frozen sweet corn kernels)
  • 1 tablespoon extra virgin olive oil
  • 3 medium tomatoes, diced
  • ½ a red onion, finely chopped
  • ½ cup loosely packed chopped cilantro
  • juice of 2 limes (or 3 limes if not very juicy)
  • 1 jalapeño pepper, seeded and diced
  • 4 small cloves garlic, minced
  • ½ teaspoon salt
  • 1 teaspoon granulated sugar
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Remove the kernels from the corn ears or thaw frozen corn.
  2. In a large bowl combine corn, diced tomatoes, chopped onion, cilantro, and jalapeño.
  3. Add minced garlic, lime juice, olive oil, salt, sugar, and black pepper.
  4. Toss everything together until evenly coated.
  5. Taste and adjust seasoning if needed.
  6. Chill for 10 minutes to let flavors meld.
  7. Serve with tortilla chips or as a topping for tacos.

Notes

For extra freshness, add diced avocado just before serving.
