Ingredients

- 4 ears of sweet corn (or 4 cups frozen sweet corn kernels)
- 1 tablespoon extra virgin olive oil
- 3 medium tomatoes, diced
- ½ a red onion, finely chopped
- ½ cup loosely packed chopped cilantro
- juice of 2 limes (or 3 limes if not very juicy)
- 1 jalapeño pepper, seeded and diced
- 4 small cloves garlic, minced
- ½ teaspoon salt
- 1 teaspoon granulated sugar
- ½ teaspoon freshly ground black pepper
Instructions
- Remove the kernels from the corn ears or thaw frozen corn.
- In a large bowl combine corn, diced tomatoes, chopped onion, cilantro, and jalapeño.
- Add minced garlic, lime juice, olive oil, salt, sugar, and black pepper.
- Toss everything together until evenly coated.
- Taste and adjust seasoning if needed.
- Chill for 10 minutes to let flavors meld.
- Serve with tortilla chips or as a topping for tacos.
Notes
For extra freshness, add diced avocado just before serving.
