- 1 lb ground beef
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup sour cream
- 1 small onion, diced
- 2 cups shredded cheddar cheese, divided
- 1 bag (32 oz) frozen tater tots
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ½ cup milk (optional for creaminess)
- 1 tablespoon olive oil (for cooking beef)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, add olive oil and brown the ground beef, breaking it up with a spoon, until no longer pink; drain excess fat.
- Add the diced onion and cook for 3–4 minutes until softened.
- Stir in garlic powder, paprika, salt, and pepper, then mix in the cream of mushroom soup and milk if using; heat through.
- Fold in half of the shredded cheddar cheese and sour cream until well combined.
- Spread the beef mixture evenly in a greased 9×13 inch baking dish.
- Arrange the frozen tater tots in a single layer over the beef layer.
- Sprinkle the remaining shredded cheddar cheese over the tater tots.
- Bake for 35–40 minutes, or until the tots are golden brown and the cheese is melted and bubbly.
- Let the casserole rest for 5 minutes before serving.
Notes
For extra flavor, add a pinch of smoked paprika or a dash of Worcestershire sauce to the beef mixture.
