Ingredients

  • 1 can (15 oz) pumpkin puree
  • 1 can (12 oz) evaporated milk
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 box yellow cake mix
  • 1 cup (2 sticks) unsalted butter, melted
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together pumpkin puree, evaporated milk, eggs, sugar, cinnamon, and nutmeg until smooth.
  3. Pour the pumpkin mixture evenly into the prepared baking dish.
  4. Sprinkle the dry cake mix directly over the pumpkin layer—do not stir.
  5. Drizzle melted butter evenly over the top of the cake mix.
  6. Top with chopped pecans if using.
  7. Bake for 50-60 minutes or until golden brown and the center is set.
  8. Let cool slightly before serving. Delicious with a scoop of vanilla ice cream or whipped cream.

Notes

For a crunchier top, use cold butter sliced thin instead of melted. Great made a day ahead and reheated!
