- 1 9-inch pie crust, unbaked
- 1 cup pecan halves
- 1 cup chopped Brazil nuts
- 3 large eggs
- 1 cup light corn syrup
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C).
- Place the pie crust into a 9-inch pie dish and set aside.
- In a large bowl, whisk together the eggs, corn syrup, granulated sugar, brown sugar, melted butter, vanilla extract, and salt until well combined.
- Stir in the pecans and Brazil nuts.
- Pour the filling into the prepared pie crust.
- Bake for 50-60 minutes, or until the center is set and the top is golden brown.
- Let the pie cool completely before serving to allow the filling to firm up.
- Serve with whipped cream or vanilla ice cream if desired.
Notes
To prevent the crust from over-browning, cover the edges with foil halfway through baking if needed.
