A moist, flavorful banana bread that’s perfect for breakfast or dessert.

- 2 to 3 medium (7 to 7–7/8 long) very ripe bananas, peeled (about 1 1/4 to 1 1/2 cups mashed)
- 1/3 cup (76g) butter, unsalted or salted, melted
- 1/2 teaspoon baking soda
- 1 pinch salt
- 3/4 cup (150g) sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups (205g) all-purpose flour
- 1 teaspoon ground cinnamon (optional)
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- Stir in the melted butter until fully combined.
- Mix in the sugar, beaten egg, and vanilla extract.
- Add the baking soda and salt, then fold in the flour until just incorporated.
- If using, sprinkle in the cinnamon and fold it in.
- Gently fold in the chopped walnuts, if desired.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For extra moisture, use bananas that are heavily speckled with brown spots. You can also add chocolate chips or raisins for variation.
