Ingredients

  • 1 medium onion
  • 3 garlic cloves
  • 800g canned crushed tomatoes
  • 2 cups vegetable broth
  • 200ml heavy cream
  • 1 tablespoon tomato paste
  • Salt
  • Black pepper
  • 1 teaspoon sugar
  • Fresh basil leaves

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Chop the onion and garlic.
  3. Sauté the onion until soft.
  4. Add the garlic and cook for 1 minute.
  5. Stir in the tomato paste.
  6. Add crushed tomatoes and vegetable broth.
  7. Season with salt, pepper, and sugar.
  8. Simmer for 20 minutes.
  9. Add the heavy cream.
  10. Blend until thick and smooth.
  11. Adjust seasoning and garnish with fresh basil.
