Ingredients

- 1 lb ground turkey
- 1 can kidney beans (15 oz), drained and rinsed
- 1 can diced tomatoes (15 oz)
- 1 onion, chopped
- 1 tbsp chili powder
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 2 tbsp olive oil
- 2 cups chicken broth
- Salt and pepper to taste
- Optional garnish: sour cream and chopped cilantro
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until softened.
- Add ground turkey, breaking it up, and cook until browned.
- Stir in chili powder, cumin, and smoked paprika, cooking for 1 minute.
- Add diced tomatoes, kidney beans, and chicken broth, mixing well.
- Bring to a simmer, reduce heat, and let cook for 30 minutes, stirring occasionally.
- Season with salt and pepper to taste, and garnish with sour cream and cilantro if desired.
Notes
Serve with crusty bread or over rice for a complete meal.
