- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups spinach (optional)
- 9 lasagna noodles
- 2 cups mozzarella cheese, shredded
- 1/2 cup Parmesan cheese
- Salt and pepper to taste
- 1/2 teaspoon Italian seasoning
- 4 tablespoons butter
- 4 tablespoons flour
- 3 cups milk
- 1/4 teaspoon nutmeg
Instructions
- Cook lasagna noodles according to package instructions and set aside.
- Heat olive oil in a skillet and sauté onion and garlic.
- Add the ground turkey and cook until browned.
- Season with salt, pepper, and Italian seasoning; stir in spinach if using.
- In a saucepan, melt butter and whisk in flour to form a roux.
- Slowly add milk, whisking until smooth and thickened.
- Season the white sauce with salt, pepper, and nutmeg.
- Preheat oven to 375°F (190°C).
- Spread a thin layer of white sauce in a baking dish.
- Layer noodles, turkey mixture, white sauce, and cheese.
- Repeat layers and finish with white sauce and cheese on top.
- Bake 25–30 minutes until bubbly and golden.
- Let rest 10 minutes before slicing and serving.
Notes
Make ahead friendly—assemble and refrigerate up to 24 hours before baking. Add extra mozzarella for a creamier top.
