Description

Hearty and savory stuffed peppers filled with seasoned ground turkey, rice, and tomato sauce, baked to a melty finish.


Ingredients

  • 1 lb ground turkey
  • 4 bell peppers, halved and seeded
  • 1 cup rice
  • 1 cup tomato sauce
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Water (optional, for cooking rice)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a saucepan, cook the rice according to package instructions; set aside.
  3. In a skillet, heat olive oil over medium heat and sauté onion until translucent.
  4. Add garlic and cook for 30 seconds.
  5. Stir in ground turkey, breaking it up, and cook until browned; drain excess fat.
  6. Season with Italian seasoning, add cooked rice, tomato sauce, salt, and pepper; cook for 2 minutes.
  7. Divide the mixture among the halved bell peppers, placing them in a baking dish.
  8. Top each pepper with a generous amount of shredded mozzarella cheese.
  9. Bake for 25–30 minutes, until the cheese is melted and the peppers are tender.
  10. Serve hot, optionally garnished with fresh herbs.

Notes

Can be prepared ahead and refrigerated; leftovers reheat well.
