- 1 lb ground turkey
- 4 bell peppers, halved and seeded
- 1 cup rice
- 1 cup tomato sauce
- 1 tsp Italian seasoning
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Water (optional, for cooking rice)
Instructions
- Preheat oven to 375°F (190°C).
- In a saucepan, cook the rice according to package instructions; set aside.
- In a skillet, heat olive oil over medium heat and sauté onion until translucent.
- Add garlic and cook for 30 seconds.
- Stir in ground turkey, breaking it up, and cook until browned; drain excess fat.
- Season with Italian seasoning, add cooked rice, tomato sauce, salt, and pepper; cook for 2 minutes.
- Divide the mixture among the halved bell peppers, placing them in a baking dish.
- Top each pepper with a generous amount of shredded mozzarella cheese.
- Bake for 25–30 minutes, until the cheese is melted and the peppers are tender.
- Serve hot, optionally garnished with fresh herbs.
Notes
Can be prepared ahead and refrigerated; leftovers reheat well.
