- 1 medium onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1/2 cup shredded cheddar cheese
- Fresh cilantro, chopped (for garnish)
- Lime wedges (optional, for serving)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and bell pepper, sauté until softened, about 3 minutes.
- Stir in minced garlic and cook for 30 seconds.
- Add ground turkey, breaking it up with a spoon; cook until browned, about 5-6 minutes.
- Sprinkle taco seasoning over the turkey and stir to combine.
- Add corn, black beans, and salsa; mix well and let simmer for 5 minutes.
- Reduce heat and fold in shredded cheddar cheese until melted and coated.
- Serve hot, garnished with chopped cilantro and lime wedges if desired.
