  • 1 cup black beans, drained and rinsed
  • 1 cup salsa
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1/2 cup shredded cheddar cheese
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (optional, for serving)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and bell pepper, sauté until softened, about 3 minutes.
  3. Stir in minced garlic and cook for 30 seconds.
  4. Add ground turkey, breaking it up with a spoon; cook until browned, about 5-6 minutes.
  5. Sprinkle taco seasoning over the turkey and stir to combine.
  6. Add corn, black beans, and salsa; mix well and let simmer for 5 minutes.
  7. Reduce heat and fold in shredded cheddar cheese until melted and coated.
  8. Serve hot, garnished with chopped cilantro and lime wedges if desired.
