- 4 salmon fillets (about 6 oz each)
- 1 cup fresh spinach leaves
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat oven to 375°F (190°C).
- Pat salmon fillets dry, season both sides with salt, pepper, and oregano.
- Heat olive oil in an oven-safe skillet over medium-high heat; sear salmon skin-side down 3-4 minutes until golden.
- Flip fillets, add minced garlic, and cook 30 seconds.
- Reduce heat, pour in cream, sprinkle Parmesan, and stir until sauce thickens slightly.
- Add spinach and lemon zest; cook until spinach wilts.
- Transfer skillet to oven and bake 8-10 minutes until salmon is cooked through.
- Remove, drizzle with lemon juice, and serve immediately.
Notes
Serve with roasted potatoes or crusty bread for a complete meal.
