  • 2 (3 ounce) packages cream cheese, softened
  • 1⁄4 cup butter, softened
  • 1 1⁄2 cups confectioners’ sugar
  • 1⁄3 cup baking cocoa
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 1⁄2 cups heavy whipping cream, whipped, divided
  • 1 1⁄2 cups fresh strawberries, halved
  • 1 drop red food coloring

Instructions

  1. Melt chocolate and shortening together in a double boiler or microwave, stirring until smooth. Let cool slightly.
  2. In a large bowl, beat cream cheese and butter until light and fluffy.
  3. Gradually add confectioners’ sugar and cocoa, beating until well combined.
  4. Stir in milk and vanilla extract.
  5. Add the melted chocolate mixture and mix until smooth.
  6. Gently fold in 1 1/2 cups of whipped cream.
  7. Add a single drop of red food coloring and gently swirl to create a subtle pink hue.
  8. Layer the chocolate mousse and halved strawberries in individual serving glasses or a large trifle dish.
  9. Top with the remaining whipped cream.
  10. Chill for at least 30 minutes before serving.

Notes

For a more intense chocolate flavor, use dark chocolate baking squares. You can substitute raspberries or blueberries for the strawberries. Store leftovers in an airtight container in the refrigerator for up to 2 days. To make this recipe even more special, garnish with chocolate shavings or a sprig of mint.
