Ingredients

- 2 cups all-purpose flour
- 2 tbsp sugar
- 2 eggs
- 1 3/4 cups milk
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp salt
- 2 tbsp melted butter
Instructions
- Whisk together flour, sugar, baking powder, and salt in a large bowl.
- In a separate bowl beat the eggs, then stir in milk, vanilla extract, and melted butter.
- Combine wet and dry ingredients and mix until just blended; batter will be slightly lumpy.
- Heat a non-stick skillet or griddle over medium heat and lightly coat with butter or oil.
- Pour 1/4 cup of batter for each pancake onto the hot surface.
- Cook until bubbles form on the surface and edges look set, about 2 minutes, then flip and cook another 1-2 minutes until golden brown.
- Serve warm with butter and maple syrup.
Notes
Let the batter rest 5 minutes for extra fluffiness.
