- 1 lb ground beef
- 4 cups beef broth
- 2 medium carrots, diced
- 1 cup green beans, cut into 1-inch pieces
- 1 can (15 oz) diced tomatoes, undrained
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 celery stalks, diced
- 2 medium potatoes, diced
- 1 teaspoon dried thyme
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until fragrant, about 2 minutes.
- Add ground beef and cook until browned, breaking it up with a spoon.
- Stir in carrots, celery, potatoes, and thyme, cooking for 5 minutes.
- Pour in beef broth and diced tomatoes, bring to a boil.
- Reduce heat and simmer for 30 minutes, or until vegetables are tender.
- Add green beans and cook for an additional 10 minutes.
- Season with salt and pepper to taste, and remove bay leaf before serving.
Notes
For a thicker soup, mash some of the potatoes against the side of the pot. You can also add a splash of Worcestershire sauce for extra depth.
