Ingredients

  • 1 tbsp kosher sea salt
  • 1 cup (117 g) raw walnuts
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 1/8 tsp cayenne
  • 3 large chicken breasts (1 1/2 to 2 lbs total)
  • 2 tbsp walnut oil, avocado oil, or butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pulse walnuts, garlic, rosemary, cayenne, and kosher sea salt in a food processor until finely ground.
  3. Pat chicken breasts dry and season lightly with salt and pepper.
  4. Press walnut mixture firmly onto each chicken breast to coat.
  5. Heat walnut oil in a large oven-safe skillet over medium-high heat.
  6. Sear chicken for 2–3 minutes per side until lightly browned.
  7. Transfer skillet to oven and roast for 15–20 minutes or until internal temperature reaches 165°F (74°C).
  8. Rest chicken for 5 minutes before serving.

Notes

For extra crispiness, broil the chicken for 2 minutes after roasting.
