Description

Ingredients

  • 3 1/4 cups of all-purpose flour
  • 1 cup sugar
  • 1 cup olive oil
  • 3 cups zucchini, grated
  • 4 teaspoons salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 3 eggs
  • 1/2 cup crumbled feta cheese

Instructions

  1. Preheat oven to 180°C (350°F) and grease a loaf pan.
  2. In a large bowl, whisk together flour, sugar, salt, baking soda, and baking powder.
  3. Add the eggs and olive oil, mixing until combined.
  4. Fold in the grated zucchini and crumbled feta cheese.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50–60 minutes or until a toothpick inserted comes out clean.
  7. Let cool before slicing and serving.
