Ingredients

- 3 1/4 cups of all-purpose flour
- 1 cup sugar
- 1 cup olive oil
- 3 cups zucchini, grated
- 4 teaspoons salt
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 3 eggs
- 1/2 cup crumbled feta cheese
Instructions
- Preheat oven to 180°C (350°F) and grease a loaf pan.
- In a large bowl, whisk together flour, sugar, salt, baking soda, and baking powder.
- Add the eggs and olive oil, mixing until combined.
- Fold in the grated zucchini and crumbled feta cheese.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes or until a toothpick inserted comes out clean.
- Let cool before slicing and serving.
Notes
You can add fresh herbs like dill or mint for extra flavor.
