  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup salsa verde
  • ½ cup sour cream
  • ¼ cup chopped fresh cilantro

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 3 minutes.
  3. Stir in the minced garlic and cook for another 30 seconds.
  4. Add the ground turkey, breaking it up with a spoon, and cook until browned, about 6–8 minutes.
  5. Mix in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 1 minute until fragrant.
  6. Pour in the salsa verde and stir to combine; let simmer for 5 minutes.
  7. Transfer the mixture to a greased 9×13-inch baking dish.
  8. Spread shredded cheddar and Monterey Jack cheese evenly over the top.
  9. Drop spoonfuls of sour cream over the cheese, then swirl gently.
  10. Bake for 20–25 minutes, or until the cheese is melted and bubbly.
  11. Remove from the oven, sprinkle with fresh cilantro, and let rest for 5 minutes before serving.

Notes

For a lighter version, substitute ground turkey with ground chicken or lean ground beef. You can use a dairy-free cheese blend and coconut-based sour cream for a dairy-free option. Leftovers store well in an airtight container in the refrigerator for up to 3 days; reheat in the microwave or oven. This casserole also freezes beautifully for up to 2 months — just thaw overnight before reheating.
