Ingredients
- 1 pound (450g) ground turkey
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup salsa verde
- ½ cup sour cream
- ¼ cup chopped fresh cilantro
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 3 minutes.
- Stir in the minced garlic and cook for another 30 seconds.
- Add the ground turkey, breaking it up with a spoon, and cook until browned, about 6–8 minutes.
- Mix in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 1 minute until fragrant.
- Pour in the salsa verde and stir to combine; let simmer for 5 minutes.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Spread shredded cheddar and Monterey Jack cheese evenly over the top.
- Drop spoonfuls of sour cream over the cheese, then swirl gently.
- Bake for 20–25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, sprinkle with fresh cilantro, and let rest for 5 minutes before serving.
Notes
For a lighter version, substitute ground turkey with ground chicken or lean ground beef. You can use a dairy-free cheese blend and coconut-based sour cream for a dairy-free option. Leftovers store well in an airtight container in the refrigerator for up to 3 days; reheat in the microwave or oven. This casserole also freezes beautifully for up to 2 months — just thaw overnight before reheating.
