- 12 oz. fresh rhubarb, cubed (cut each stalk down the middle then chop)
- 12 oz. strawberries, quartered
- ⅓ cup pure maple syrup
- 3 tablespoons chia seeds
- 1 tablespoon lemon juice
Instructions
- In a medium saucepan, combine rhubarb, strawberries, and maple syrup. Bring to a simmer over medium heat.
- Cook for 10-15 minutes, stirring occasionally, until fruit breaks down and becomes saucy.
- Remove from heat and stir in chia seeds and lemon juice.
- Let stand for 5-10 minutes to thicken, then stir again.
- Transfer to a clean jar and refrigerate. Jam will continue to thicken as it cools.
