  • 12 oz. fresh rhubarb, cubed (cut each stalk down the middle then chop)
  • 12 oz. strawberries, quartered
  • ⅓ cup pure maple syrup
  • 3 tablespoons chia seeds
  • 1 tablespoon lemon juice

Instructions

  1. In a medium saucepan, combine rhubarb, strawberries, and maple syrup. Bring to a simmer over medium heat.
  2. Cook for 10-15 minutes, stirring occasionally, until fruit breaks down and becomes saucy.
  3. Remove from heat and stir in chia seeds and lemon juice.
  4. Let stand for 5-10 minutes to thicken, then stir again.
  5. Transfer to a clean jar and refrigerate. Jam will continue to thicken as it cools.
