Ingredients

  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  2. In another bowl, beat the egg and mix with milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; lumps are fine.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour about ¼ cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  7. Repeat with the remaining batter.
  8. Serve warm with syrup, fresh fruit, or toppings of your choice.

Notes

For extra fluffiness, let the batter rest for 5-10 minutes before cooking.
