- 3 ½ teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 ¼ cups milk
- 1 egg
- 3 tablespoons butter, melted
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In another bowl, beat the egg and mix with milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; lumps are fine.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour about ¼ cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Repeat with the remaining batter.
- Serve warm with syrup, fresh fruit, or toppings of your choice.
Notes
For extra fluffiness, let the batter rest for 5-10 minutes before cooking.
