Ingredients

  • 2 cups buttermilk
  • 2 eggs
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, and sugar.
  2. In a separate bowl, beat the eggs and mix in the buttermilk, melted butter, and vanilla extract.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.
  4. Preheat a griddle or skillet over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup of batter onto the griddle for each pancake.
  6. Cook until bubbles appear on the surface and the edges look set, then flip and cook for another 1-2 minutes until golden brown.
  7. Repeat with the remaining batter.
  8. Serve warm with butter and maple syrup.

Notes
