- 2 cups buttermilk
- 2 eggs
- 1/4 cup melted butter

Instructions
- In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, and sugar.
- In a separate bowl, beat the eggs and mix in the buttermilk, melted butter, and vanilla extract.
- Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.
- Preheat a griddle or skillet over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the griddle for each pancake.
- Cook until bubbles appear on the surface and the edges look set, then flip and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter.
- Serve warm with butter and maple syrup.
Notes
For extra fluffy pancakes, let the batter rest for 5 minutes before cooking. Avoid overmixing to keep them light and airy.
